Coconut Cream Ritz Cake

"I first tasted this delicious cake at a meeting of my craft circle in Hartland, WI about 25 years ago. It has always been one of my favorites. In fact, I plan on serving it this weekend at my restaurant in PA!"

  • Beat egg whites until stiff.
  • Add sugar and vanilla.
  • Fold in walnuts and Ritz cracker crumbs.
  • Put in well-greased 13x9 inch pan.
  • Spread evenly.
  • Bake at 350 degrees until light brown (Check after 15 or 20 minutes).
  • Let cool.
  • Spread with whipped cream.
  • Shake coconut over top.

I was born and raised in Chicago in a neighborhood known as Bridgeport. I spent most of my adult life in Hartland, WI, where I raised my 3 children and taught preschool. I moved to PA in 1999. I live in a small town on the banks of the Upper Delaware River in PA. I recently sold my small restaurant in a converted dairy barn. For fun I can imagine nothing better than an evening out with friends and loved ones.
