I first tasted this delicious cake at a meeting of my craft circle in Hartland, WI about 25 years ago. It has always been one of my favorites. In fact, I plan on serving it this weekend at my restaurant in PA!

  1. Beat egg whites until stiff.
  2. Add sugar and vanilla.
  3. Fold in walnuts and Ritz cracker crumbs.
  4. Put in well-greased 13x9 inch pan.
  5. Spread evenly.
  6. Bake at 350 degrees until light brown (Check after 15 or 20 minutes).
  7. Let cool.
  8. Spread with whipped cream.
  9. Shake coconut over top.
