from Eat Fat, Lose Fat. make it vegan by using vegetable broth/stock *i made this after i posted it, and i think i would reduce the stock to 3 cups to make it a bit thicker/richer.
- 15 ounces coconut milk
- 4 cups chicken stock
- 28 ounces diced tomatoes (fire roasted is best)
- 4 ears corn (kernels cut from)
- 1⁄4 teaspoon cayenne pepper
- 1⁄2 teaspoon thyme
- combine all ingredients in a pot, bring to a boil, simmer 10 minutes.
