I've altered the recipe by substituting sugar for stevia 1/4 cup and coconut sugar 1/4 cup and 1 cup flour 1/2 cup coconut 1/2 cup oats, still 1 egg, they came out great . I think I could reduce the sugar content more as they taste too sweet to me.
I was in the mood for coconut cookies, and this recipe fit the bill. As did other reviewers of this recipe, I decreased the amount of sugar to 3/4 cup due to my using sweetened coconut flakes. Also I increased the amount of coconut to 1 1/4 cups, as 3/4 cup didn't seem like enough to satisfy my craving. The cookies turned out chewy, crunchy and packed with coconut flavor. I think if I had added only 3/4 cup of coconut, the coconut flavor wouldn't have been as present. Thanks for sharing this recipe, Bert! Deeeelicious!
A fabulous cookie-we're all seriously addicted!! Thanks Bert
My grandson needed to bake some cookies from scratch to get extra credit in home ec and made these cookies. He had no problems in making them and it turned out great. Tasted great and we will make it again maybe add choc chips or whatever I have in the cupboard. Thanks.
Five Stars from this family too! Even my MIL, who doesn't eat cookies, ate TWO! :o) This recipe is really great!! I did add a few white chocolate chips, as someone suggested, but will not use them next time - this recipe is great without!
Bert, These cookies were easy and absolutely scrumptious. (I couldn't resist adding a little salt and some vanilla). Thanks. Dottie5
