I multiplied this up to make a whole pitcher of it. I used light coconut milk and half lemon/half fresh squeezed lime juice (what I had on hand). Pretty creamy pink color, and not excessively sweet with the citrus juice in there. It needs to be stirred before serving, because it separates pretty quickly, but no big deal, it still tastes good. Made & reviewed for ZWT 4 - Kumquat's Kookin' Kaboodles! I made for DH & I & we loved it I used fresh lime juice in place of lemon & it wasn't overly sweet in the end. I agree with the previous poster - this would be great for a girly girls party! :)

Amanda, this would make a great punch for a little girl's birthday party. Very refreshing and very pretty! I liked it, but it was just a bit too sweet for me. (Of course, that would be easily resolved by adding some libation, but that would defeat the purpose of non-alcoholic... :lol: ) Thank you for posting Amanda!
