  • Brown chicken in butter over medium high heat.
  • Add onion and garlic, and saute for another 2 minutes.
  • Add rest of ingredients, mixing well, and simmer for 5 minutes.

  1. This recipe was a little bland for my family's taste. However, the aroma and the appearance are wonderful. I ended up adding some spices... some red pepper flakes, sea salt,paprika and garlic powder (because the cloves I put in couldn't really be tasted.) All in all, I think this is a fine recipe, but for my taste I wish the cilantro, lime and coconut flavors were a bit more prevalent. I think next time I will double the lime juice, double or triple the cilantro, double or triple the garlic, and possibly put in some flaked coconut as well. However, if you prefer mild nuances of flavor, then you should make the recipe as it is.
     
  2. My husband said it's one of the best dishes I've ever made! I found that I needed some sweetness to it.....so when I mashed a little of my sweet potatoe into it, it was perfect! I cut back on the curry b/c I typically don't like too much curry, but I really couldn't taste it, so next time I might try what the recipe called for. I really like how easy this is to prepare! THANKS!
     
  3. This was absolutely delicious. You forgot to mention anything about the rice..lol. just in the title. so I made my African Style Rice to go with this. Very yummy! I made this using chicken thighs as they are much more juicier. I didn't have any onions so I used onion powder and no cilantro but I had coriander powder. I did add some ground ginger, tbs of peanut butter and a few dashes of soy sauce to the sauce. What I did was make the sauce first, put it in the refrigerate to let the flavors marry together. I made the rice and then, I made the chicken, once the chicken was a nice golden brown I added the sauce and simmered on low for 10 minutes. Fabulous!!! Thank you Miss Diggy!
     
  4. Miss Diggy, you have a keeper here! The flavors all blend together wonderfully! I did season the chicken as it was browning with some season salt and pepper. Other then that, I made no other changes. I loved this over jasmine rice and served with a fresh spring salad.
