Yum! We really enjoyed these coconut tenders. I think that using the blender made my dipping sauce alot more like applesauce, but no matter, as the taste was great. Next time, though, I'll use my food processor, to leave it a little more 'chunky'. The flavor was really good, from the tenders and the sauce, as the rum undertones were very nice. Thanks for being a creative force, Rita~, and sharing these tidbits with everyone!

Total Keeper. I baked mine to keep it healthier, and accidentally overbaked it since it's hard to tell in the oven when white chicken coated in white coconut is fully cooked! I baked it at 400 for about 45 minutes (my chicken was partially frozen too). It was yummy. The sauce for us was pretty thick, more like a compote, but still good. Thank you for a new recipe!

Yum, yum yum!! We loved this. I omitted the salt (personal preference) and used a lemon for the juice and zest. Thanks for sharing! ZWT7

Made this for my sisters bridal shower. It was a hit! ... and all that had it loved it. I rated it lower because it was time consuming, and not easy as stated in the opening paragraph. Would I make it again? Maybe, on a special occasion. Would others who had it make it? Maybe. I cut the chicken in cube size bites and cooked them that way. Then I served each piece with a toothpick in it. Next time I might just do the strips and cut it after it's cooked to make it faster. Thanks! P.S. this recipe is Gluten Free!

Such a good recipe! I wanted a curry element (using up Carib yellow curry) and so I dusted the chicken with that. This recipe does come together very quickly and is so fresh-tasting. The mango-rum sauce couldn't have been better. Rita, you sure know how to make 'em!

Surprisingly easy and amazingly good! I didn't have any cornstarch on hand so had to substitute flour at the last minute, but it still worked a treat. My friend's 7 year old (that eats almost nothing) asked for the rest of the chicken for her school lunch!

delish recipe!!!! i made some changes to the chicken method... i used a tempura batter to dip the chicken in, then i rolled the chicken in a combination of 1 cup panko breadcrumbs (seasoned with ground ginger, garlic and cayenne) and 1 cup coconut. then i deep fried in my fryer. the mango rum sauce is excellent! i did add a bit of red onion, fresh parsley and garlic! everyone loved it! thanks for another awesome keeper, rita! will be making this recipe many more times!!!
