Coconut Chia Seed Oatmeal

"Saw this recipe on a United Flight Magazine and sounds like my kind of breakfast so had to save it here. Prep time does NOT include overnight refrigeration (so plan ahead) 4 cups of water to boil oats not included in ingredients"

  • In medium pot bring 4-5 cups of water to a boil.
  • Add steel cut oats, reduce to medium low heat and simmer uncovered for about 25 minutes, stirring occasionally.
  • Drain oats and rinse well with cold water.
  • Sprinkle chia seeds over cooked oats.
  • In medium bowl, whisk together coconut milk, agave nectar and water.
  • Pour mixture over oats and chia sees and stir until evenly combined.
  • Set aside to chill in refrigerator for at least 4 hours, but preferably overnight.
  • Spoon oatmeal into 2 bowls and top each one with 1/4 cup mango and a drizzle of coconut milk (optional) to serve.
