This was an amazing little cake. I cut the recipe in half as I am baking for only dh and myself, it worked great. Beautiful texture and a lovely subtle flavor. It was quick and very easy to make. We really enjoyed this iced with a simple lemon glaze. Made for ZWT7 Witchin Kitchen

We thoroughly enjoyed this cake. So easy to make and it is very light in flavor and texture. I served it with chopped ripe mango on top.

This recipe is so easy to do. The cake is moist and has a great texture. I reduced the sugar a little bit because I used sweetened coconut. Thanks katew :) made for ZWT9

I made this for ZWT 9 (Caribbean) and couldn't be happier with the result. My gosh, it takes longer to measure the ingredients than it does to whiz the food pro and put it in the pan. I used a deep disk pie pan and it worked perfectly. It comes out fluffy and light with a mild coconut flavor (I think I'd add a bit coconut extract next time) and it's really moist. I made a glaze, that thickened too much before I got it on the cake, with lemon juice, water, Splenda and Malibu rum. I can see DH asking for this again and thats a real score. :D

A tasty little cake that was so easy to bake! It was so simple to put together and was very tasty. Was great just the way it was, with no embellishment necessary. Made for ZWT7 by a Hot Pink Lady.
