    We don't eat grains or refined sugar, so I'm always on the lookout for tasty homemade treats with top notch ingredients. I came up with this recipe after finding that organic dessicated coconut (no sweetener added) was affordable! I started with the idea of a pie crust recipe I had from someone else and evolved it into these brownies. Preparation time includes the stewing of the dates.

    Directions:

      Preheat the oven to 175°C / 350°F.

      Place dates and water in a saucepan and leave them to gently warm until the dates are soft and some water is absorbed.

      In a mixing bowl, beat the eggs, then add the dry ingredients. Stir to combine.
    4. 4
      Press the dates and water through a strainer, or process the dates until smooth, and add to the mixture.

      Stir until well combined.

      Press into a small baking dish and bake for 15 minutes.

      For some unknown reason I can have a limited amount of dates although I can't have fructose and have trouble with most fresh fruit. This recipe is very easy and extremely tasty. Not so very sweet - just how I like it! DH was raving because he is fond of coconut everything - so I'll sure make this again! Thanks for posting. Made for Spring PAC 2010.
