A delicious tart that is sooooo easy to make.
- 2 eggs
- 1 cup coconut
- 1 cup white sugar
- 1 teaspoon vanilla
- 1 tablespoon butter
- 1 pinch salt
- frozen tart shell
- Mix all ingredients together.
- To your tart shell, add 1 teaspoons of jam. Cover with coconut mixture. Bake at 350 until browned.
This was soooo easy, especially when you use frozen store-bought tart shells as I did. I know home-made pastry would be better, but these were still excellent! I brought them in to work and my co-workers loved them. My mother-in-law used to make them, but I couldn't find her recipe, so I looked one up on the Internet and found this one. Lucky me! p.s. I halved the recipe which worked fine.
Found the tart filling a bit dry and added 2 tbsp milk and 1/4 cup hot water. Decorated tarts with with half a red or green glace cherry before baking.
