  1. Place chicken, giblets and onion in a large saucepan.
  2. Add the water, bring to the boil.
  3. Cover and simmer for 1 1/2 hours until chicken is tender.
  4. Remove from heat and skim.
  5. Discard giblets.
  6. Strip meat from the chickenn, discarding bones and skin.
  7. Return meat to the stock, add leeks, rice and carrot.
  8. Bring back to the boil, cover and simmer 30 minutes.
  9. Season well with salt and pepper.
  10. Add parsley to garnish.
