Directions

  1. Cut fish into bite size pieces and place in large pot.
  2. Add all the ingredients except salt, pepper and rice.
  3. Bring to a boil.
  4. Cover and simmer for 10 to 20 minutes.
  5. Add salt and pepper to taste.
  6. Place in bowls for serving and top with heaps of cooked rice.

This gumbo is nice, but lacks the depth of flavor we like in a gumbo. It was very easy to prepare, and made a nice lunch with crusty rolls and salad. It has a very bland flavor for gumbo so we added lots of salt at the table.
