Fast Easy Cake made with Splenda. No icing needed for this recipe!
- 1 (15 ounce) can fruit cocktail, drained
- 3 cups pancake mix
- 2 eggs
- 1 cup milk
- 2 cups Splenda granular
- 1 teaspoon cinnamon
- 1 cup applesauce
- 1 teaspoon vanilla
- Mix all ingredients except fruit cocktail on low to med for 3 minutes Stir in fruit cocktail pour into greased bundt pan. Bake at 350 for 1 hour. Immediately flip onto a plate to cool.
- *added special touch before pouring batter in pan sprinkle some cinnamon sugar this adds a special kick to the outside.
- **use pie filling in place of fruit cocktail great taste!
This cake was pretty good for being sugar free. It was moist due to the applesauce and added fruit cocktail. I served it with some fresh cut strawberries on top. (and Cool Whip for my non-diabetic friends!) I will save it and use again
