Coarse Black Pepper-Cheese Bread

"My family loves this bread! I like to serve it especially with soups and sometimes along with dinner. This is the bread I make when I don't use my bread machine. This recipe came from a good cook in our area that she shared in our local paper. The prep time includes the rising time, and I put 25 min. baking time, but start checking after 20 minutes.   • In a large mixing bowl, combine 2 cups flour, yeast, sugar, salt and pepper.
  • Mix well In a saucepan, heat milk, water and shortening until warm.
  • Add to flour mixture Add egg and beat at low speed until moistened.
  • Beat 3 minutes at medium speed.
  • By hand, add cheese and enough flour to make a firm dough.
  • Knead well on a floured surface until smooth and elastic, about 10 minutes.
  • Punch dough down, divide into 2 parts.
  • Shape into 2 round loaves.
  • Place on a greased baking sheet, cover and let rise in a warm oven until light and doubled, about 30 minutes.
  • Bake at 375 degrees for 20-25 minutes, until golden brown.
  • Cool on racks, Makes 2 loaves.

  1. This bread was not as "cheddary" as some others I've made, but it is delicious and makes wonderful sandwiches. Love the little kick the pepper gives. I added a bit of asiago cheese to the cheddar. It also made the most beautiful loaves of all in my traditional Christmas bread baking marathon.
     
  2. Made this to go with dinner last night and it was great. Loved the bite of the pepper, and the flavor of the cheese. I did a few things different. Cut the recipe in half to make one loaf. Added sourdough starter for half of the yeast to give it that sourdough zing. Added gluten to increase the rise, used sharp cheddar cut in cubes instead of grated and made it all, including kneading in my KA. Even so it made one HUGE loaf, that was soft and light on the inside with a great crusty outside slices of this will be great on sandwiches. I will be using this recipe again. Thinking I might even try making it in rolls. A great recipe as is, and I loved my small changes too.
     
  3. delicious!! this is a fairly quick bread to make since it only has 1 short rise. i used cubed pepper jack and monterrey cheeses (a little more than called for). came out very moist.
     
  4. This was a wonderful bread! I even messed up and forgot the sugar and it was still really wonderful. I used my kitchenaid for the whole process including mixing in the cheese and kneading. This did completely incorporate the cheese into the bread, but we still tasted the cheddar. I did use about two cups of diced sharp cheddar cheese. It took about 30 minutes to bake here. Thanks so much, planning to make again with the sugar! LOVED the cracked pepper, so yummy!
     
  5. What a nice, flavorable loaf of bread. I really liked the pepper and cheese flavors. The recipe is very easy to follow. I wanted to make this as you directed before making substitutions. It is definately on my keeper list. Thanks, MizPK for sharing this wonderful bread recipe.

  2. Kit, we LOVED this bread!!!...and not too hard to make either LOL! As Susie, I also added olive oil in place of shortening, and used quick rise yeast. I also shaped mine in one large loaf. Delicious bread! the black pepper was not too overpowering, just the right amount. This is a bread I will make again and again...you got another winner here Kit! thanks for posting....Kitten:)

I am retired and live in Oklahoma. We use to raise scottish terriers, but now just enjoy having 3..one of which is a rare wheatland scotty. We have 2 grown daughters and my oldest has my grandson & granddaughter. Katy is almost 13 now, and I love and cherish the time she spends with me. My youngest dd is FINALLY having a baby,,a little girl due on April 1 '05. We are very excited! Hubby and I love taking out our pontoon boat every chance we get...we love to fish, but I'm happy just to be out on the water :) I love all kinds of cookbooks, especially southwest and cooking for two meals. Of course Zaar is the best recipe site on the net! I've started copying zaar recipes for my granddaughter and she says she'll never be able to make them all :) My hobbies include my dogs,,grandkids, painting art hobbies, and most crafting...love garage sales too!! I really love working outside in my gardens, but health and "old bones" keep me from it more than it used to. My hubby and I love to travel and also fish. I have used this site for awhile now and I'm embarrassed I haven't shared more of mine. Guess I've been busy making yours! When I have a question, the members here are so friendly, helpful and very quick to answer back! Of course, you've figured by now I love to talk!! I have to say my love for cooking comes from my mom. She is one of those cooks that just gets into the kitchen and starts cooking with no recipes and everything she makes is wonderful! She's about the best "all around cook" I know! I'd like to think I "inherited" some of her cooking intuition :) But getting close to 80 (sorry mom, but you sure don't look it) she cooks circles around me!
