Super light pancakes and easy to make. I got this recipe from Houston Chronicle newspaper. I like the pancakes because they are thin, not heavy. Note that because of the carbonated club soda the batter cannot be stored but if you make all of the pancakes (or waffles, though I haven't tried this)you can freeze them for later.

Ingredients Nutrition

  • 2 cups biscuit mix (I use Bisquick)
  • 1 egg
  • 12 cup vegetable oil
  • 1 12 cups club soda


  1. Mix ingredients until smooth and blended but don't overbeat.
  2. Ladle batter onto a hot griddle or into a waffle iron.

These were horrible!!! Made them exactly as the recipe said and they were too thin and runny and had absolutely no flavor. Way too much club soda.

These are my dh's specialty. I buy club soda in those little six packs on hand just so he can make them as waffles. We haven't tried freezing them because he didn't think that it would work but next time he makes them I'll have him double the batch. We'll also have to try them as pancakes. Thanks for the ideas.
