  1. spray 2 9x5 loaf pans and set aside.
  2. Start oven at 325.
  3. Mix together:.
  4. eggs,sugar,oil,zucchini and vanilla.
  5. Add all the dry ingredients mixing well. Mix in the nuts.
  6. Divide batter evenly between the two pans.
  7. Bake at 325 for 60 minutes.
  8. The 2 loaves make 20 servings.serve.
