This is Cheesecake, New York deli style.

  1. Mix well the crust ingredients, and spread in bottom of a spring form pan. With a mixer, mix the eggs, sour cream and vanilla.
  2. Blend 1 minute.
  3. Add the cream cheese, sugar, and butter. Mix well.
  4. Pour in pan on top of crust. Bake at 325°F for 45 minutes to 1 hour.
  5. Immediately turn off the oven and broil the top until golden brown-Watch carefully as it burns easily.
  6. I like to top mine with cherry or blueberry topping, such as Comstock's.

I doubled the recipe, like the previous reviewer, and baked it in a 10 inch springform pan. Over the course of baking I changed the temperature from 325F to 400F. It took over 2.5 hours, and it still wasn't dense and firm. This cheesecake calls for way too much sour cream and needs less eggs, because it puffed up in the oven. It was a disaster.

Great cheesecake . . . rich and creamy. I doubled the recipe and baked in a 10 inch spring pan. To achieve a browned top I baked at 450 degrees for 12 minutes and reduced the heat to 300 degrees for 55 minutes. Allowed the cake to cool in the oven, with the door open. Served it chilled, topped with cherries. Yummy . . . thanks for sharing.
