This is a great coleslaw to serve with BBQ, or on Pulled Pork Sandwiches--yum! To save time, buy the pre-shredded cabbage and carrots. Cook time is chill time. Makes 6 cups. Adapted from Best Foods.
- 1 cup mayonnaise
- 3 tablespoons lemon juice (I use white vinegar)
- 2 tablespoons sugar (or Splenda)
- 1 teaspoon salt
- 6 cups shredded cabbage
- 1 cup shredded carrot
- 1⁄2 cup thinly sliced green pepper
- Combine first 4 ingredients.
- Stir in remaining ingredients.
- Cover; chill.
