Clam Chowder - Walt Disney World

- 453.59 g margarine
- 340.19 g all-purpose flour
- 652.03 g can clam juice
- 708.73 g can clams, chopped
- 354.88 ml diced celery
- 354.88 ml diced onions
- 354.88 ml diced green peppers
- 1576.98 ml hot milk
- 47.25 g salt
- 1.23 ml white pepper
- 1.23 ml ground thyme
- 354.88 ml diced potatoes (1/2 inch cubes)
directions
- With melted margarine, combine celery and onions, cook for 5 minutes or until transparent.
- Add flour to make roux and mix until smooth.
- Let it cook for a few minutes, then add hot clams and juice and half of the hot milk. Mix until all the flour lumps are smooth.
- Continue cooking for about 10 minutes.
- Add green peppers, potatoes and seasonings.
- Combine, cook until potatoes and peppers are done, then add the remainder of the milk.
