Great with fresh strawberries! Recipe from Yhteishyvä magazine.
- 200 ml whipping cream
- 1 tablespoon lime juice
- 1 tablespoon sugar (or to taste)
- 3 tablespoons chopped lemon balm (optional)
- Whip cream until stiff.
- Stir in lime juice, sugar and lemon balm.
This received mixed reviews from my diners, but I think a great deal of that might be influenced by how the cream is used. I served atop (unsweetened) sliced strawberries and angel food cake. The whipped cream was noticeably tart, but had a nice crisp flavor. I feel the lime spiked flavor would be a nice contrast with a sweeter dessert or complement something like key lime pie. It was great with pancakes and strawberry puree. But we found that it was a little bit too much lime juice. Next time I'll use half. Thanks Stormylee :) Made for PAC spring 2011
