Citrus Queso Salad (Dip for Chips)

ingredients

• 1 (10 ounce) package queso fresco, crumbled
• 1⁄2 cup Cotija cheese, crumbled
• 1⁄2 cup diced jicama
• 1 small diced cucumber
• 1⁄2 cup chopped fresh cilantro
• 1⁄2 cup diced red onion
• 2 medium tomatoes, chopped
• 1⁄2 chipotle chile in adobo, finely chopped
• 1 lime, juice of
• 1 tablespoon olive oil

directions

1. Mix first five ingredients together and set aside.
2. Mix next five ingredients in a separate bowl. Season with salt/pepper and add to cheese mixture.
3. Mix well and serve. Looks pretty if you press it into a bowl and then mound it on a plate surrounded by chips.
