  1. Trim the cauliflower of leaves and stalk.
  2. Put it into boiling salted water and boil gently for 15 minutes or until tender.
  3. Remove, drain and separate into florets.
  4. Place in a serving dish.
  5. Pour over the melted butter, seasoned with salt and pepper, into which half an orange and half a lemon have been squeezed.

I thought this was a really good way to serve cauliflower, I too, used only half the butter called for in the original recipe, and it worked fine. The only problem was: 15 minutes is much too long to boil the cauliflower. I would definitely prepare this again and cook for about 10 minutes. Thanks. Joanie.

I am always looking for fast, simple, slightly different, tasty, low-fat things to do with vegetables. Well, four out of five isn't bad. I did balk at all that butter and used half the amount called for. It was still very good.
