I got this recipe from a neighbor. or My DIL swears that this is better if let sit a while at room temp. Sometimes I add grilled chicken or turkey, serve it on a bed of field greens and call it dinner (lunch).
- 1 grapefruit, peeled and sectioned
- 2 oranges, peeled and sectioned
- 453.59 g can black beans, drained and rinsed
- 118.29 ml red onion, chopped
- 1 avocado, sliced
- 29.58 ml lemon juice
- black pepper
- Combine all ingredients. Serve.
I love the beans and avocado and I love the oranges and grapefruit but it's a very odd combination together. Just didn't really care for it.
This recipe actually comes from the SparkPeople.com healthy recipe collection. It's a free diet plan site. I tried this recipe as it is and also substituting tangerines or pomelo for the orange. All variations worked out grate and I know I'll be doing this again. The photos I posted feature tangerines, lima beans and some chicken. There are also no onions as I was out of stock but it was still a great and by far the most colorful sallad I've ever had.
