  • FOR STREUSEL: Stir brown sugar, flour, and cinnamon in small bowl. Cut in butter with a pastry blender. Set aside.
  • FOR MUFFINS: Lightly oil twelve 2 1/2-inch muffin cups or line with paper baking cups; set aside. In a medium mixing bowl stir together flour, granulated sugar, baking powder, and salt. Make a well in the center. In a small mixing bowl combine egg, apple cider, and oil; add all at once to flour mixture. Stir just till moistened. (The batter should be lumpy.).
  • Spoon about 1 tablespoon of the batter into each prepared muffin cup. Sprinkle 1 teaspoon of the brown sugar mixture over each. Fill with remaining batter. Sprinkle tops of muffins with remaining streusel.
  • Bake in a preheated 400° F oven until golden brown, about 20 minutes. Remove muffins from pans; cool slightly on racks.

  1. Why do American cake recipes always use all-purpose flour and baking powder. Why not use Self raising flour ?

  1. I just made these and followed the recipe exactly. It's almost worth it purely for the scent that fills your house. They tasted good and it's definitely the topping that makes it but I love the subtle taste of cider too. I saw a tweak adding apple sauce, I may try that next time, it sounds good.

  2. A perfect muffin! I added 1 tsp. vanilla and 1 tsp cinnamon to the batter. Also used melted butter instead of oil. Thanks for this great recipe, glad I found a way to use up the apple cider we had

  3. Great muffins--light and not too sweet. I used some homemade leftover apple cider, added some chopped pecans to the top. Also used 2 Tbsp oil and 2 Tbsp applesauce. Thanks for posting! Made for the Zaar Chef Alphabet Soup tag game.
     
  4. This recipe produces a really nice muffin - moist & not too sweet. The cider flavour is quite subtle & unique.
     
  5. Terrible. I followed the recipe exactly with the exception of putting some of the topping in the middle of the muffins. The muffins themselves had little apple cider taste before cooking and absolutly none after baking. The recipe sayd to cook 15-20 minutes at 400 F. I split the difference and the topping was dry and tastless. It was almost burnt. The butter in the topping melted and ran to the bottom of the muffin tin. DON'T waste your time.
