Cinnamon Roll Pancakes

  • Prepare pancake batter: In a medium bowl, whisk together flour, baking powder and salt. Whisk in milk, oil and egg, just until batter is moistened (a few small lumps are fine).
  • In a medium bowl, mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie and set aside.
  • In a medium, microwave-safe bowl- heat butter and cream cheese until melted. Whisk together until smooth; whisk in powdered sugar and vanilla extract.
  • Heat large skillet over medium-low heat. Spray with nonstick spray. Scoop about 3/4 cup batter onto the skillet. Snip the corner of your baggie of filling and squeeze a spiral of the filling onto the top of the pancake. When bubbles begin to appear on the surface, flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter and keep in a warm oven until ready to serve.
  • When ready to serve, spoon warmed glaze onto the top of each pancake.
  • A few helpful tips: *Keep the heat low or your pancakes might cook up too quickly. Don’t flip them until you see those bubbles starting to pop on top. Flip them with a wide spatula so you can grasp the whole thing without batter and filling dripping all over the place!
  • *If your baggie of filling begins to get too thick, just pop it in the microwave for a few seconds to soften it up again. Same with your glaze.

  1. When I make a recipe that everyone not only eats, but argues over who gets the last one, I know that I have a winner. My entire family loved these. I did make a double batch of the pancake mixture but left everything else a single batch and I still have cinnamon filling leftover. The only thing I found was that I needed to wipe the pan between batches to keep the pancake looking 'pretty'. These are very easy to make with excellent results. Thanks for posting the recipe.

WHAT A TREAT !!!! fantastic ... the consistancy of the pancake was to die for (i made fairly thick ones ) I too had alot of cinnamon mix left over and cream cheese pouring cream too .... will half these next time and use whats left over for tea or maybe even tomorrow morning... honestly put a huge smile on everyones face this morning thanks a billion for sharing this winner !!
     
  3. These were ok but I will change things next time I make them: less butter in the brown sugar & cinnamon topping (at least 3 Tbl less). A little more milk in cream cheese frosting. Scrape griddle well between batches so new pancakes don't have burnt brown sugar. Make much smaller pancakes than recipe suggests.
     
  4. I too found this recipe on recipegirl's website and made them this weekend. A BIG YUMMO to this one!! What a treat indeed. All in my family loved it. I found that I had to add a little milk to the "frosting" in order to reach the desired syrup consistency.
     
  5. Yummy! These pancakes really do taste and look like cinnamon rolls. I used my ice cream scoop to measure out the pancake batter onto the griddle and got 7 pancakes. I took Cilantro's advice and cut the cinnamon filling in half and will likely reduce further next time as we had a lot left over. Cilantro's suggestion of wiping your pan/griddle between batches is a good one...not just to keep the pancakes pretty but to keep the taste of burnt sugar off your next batch of pancakes. This recipe is a keeper...thanks for posting!

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
