Cinnamon Raisin Bread (Bread Machine)

"This is a recipe from my ABM's manual. Be advised that this is more of a savory bread than a sweet bread, but it is very delish! A very nice bread to serve as a side to soups or to make into french toast!!! Make sure you cook it on the sweet bread cycle and light crust! Recipe is for a 1 lb loaf"

  • Place ingredients EXCEPT FOR THE CINNAMON, RAISINS AND WALNUTS in the bread machine in the order your ABM recommends (mine recommends adding them in the order I have the ingredients written with water on the bottom and the yeast on the top, however I have been told that other ABM's recommend the dry ingredients first followed by the wet).
  • Close lid and turn bread machine on. . . use the "sweet bread" setting and the "light crust" setting.
  • When the bread machine beeps, add the cinnamon, raisins and walnuts. Close lid and let the bread machine continue cooking the bread.

  1. DH says "thank you" with a big smile! He just loves raisin bread and I don't make it all that often for some reason. Anyway, I found that it needed another 1/4 cup of water in order to knead well in the machine, used Splenda for the sugar, used 60% whole wheat flour, doubled the raisins and skipped the nuts. The loaf was baked in the oven (after using the dough cycle on the machine) @350 for 35 mins. The result was a lovely, very well risen, light, moist and tender bread..........and one very happy hubby. Thanks JB :D
     
  2. Excellent recipe, excellent breakfast. Great flavor and texture. I used regular milk instead of water and dry milk, found I needed to add a little more liquid as the ABM was working, because the dough seemed dry. Used the dough setting (my usual procedure) and baked 2 small round loaves at 350. Very tasty. Many thanks for posting. . . . . . Janet

LOVE this recipe - had doubled the recipie (though it overflowed the pan in the bread machine - check out the photos with the measuring tape, the loaf is 7 inches tall - will 1 1/2 the recipe next time I make it) <br/>Added the raisins, walnuts and cinnamon at the beeping after the first kneading and all got mixed in to the dough beautifully. <br/>The bread is wonderfully fluffy and is delicious - thanks for this recipe
     
  5. I have made this twice and wish I would have taken better notes the first time. I have a West Bend bread maker that allows for 1, 1.5, 2 and 2.5 lb loaves. When I attempt to change the serving size to 2.5 and click "update" it makes the loaves rise too high and dough ends up in the lid of the bread machine. It makes me wonder if the recipe requires too much yeast; once it converts to 4 1/2 teaspoons of yeast which may be too much. Next time I will only double the recipe so there is more room for the bread to rise and maybe cut back on the yeast a little. The flavor of both loaves I made were amazing. It is very hard to find bread maker recipes, even harder to find ones that are in pound increments. This one is a keeper.
