ingredients
- 1 cup steel cut oats
- 1⁄4 teaspoon salt
- 1⁄2 cinnamon stick
- 1⁄4 cup canned pumpkin puree
- 1⁄4 cup fresh blueberries
directions
- In a medium saucepan, bring 4 cups water to a boil. Stir in oats, salt, and cinnamon stick. Reduce heat slightly and boil 10 minutes, stirring occasionally. Reduce heat to low and simmer 30 minutes; stir frequently until oatmeal thickens.
- Stir pumpkin into oatmeal; divide between two warm bowls and top each with blueberries.

A good idea but not much flavor. Next time I will try adding a whole can of pumpkin. Although I used a whole cinnamon stick (wasn't sure how to cut it), I couldn't detect the cinnamon. I coated the blueberries in cinnamon sugar and that solved the problem...delicious! This was cooked well before the 30 minutes were up and could serve 3 people.
