Cinnamon Poached Peaches With Mascarpone Filling

ingredients
- 3 large ripe peaches, halved, pits removed
- 1 1⁄2 cups water
- 1 tablespoon sugar
- 2 cinnamon sticks

Filling
- 1⁄2 cup mascarpone cheese
- 1⁄2 cup whipped cream
- 3 tablespoons white sugar
- 1 teaspoon rum extract

Optional garnish
- icing sugar (optional)
- cinnamon (optional)
- 1 sprig mint (optional)
directions
- Combine water, 1 tbsp sugar and cinnamon sticks in saucepan; bring to a boil.
- Set peach halves in saucepan, cover and simmer for 10 minutes.
- Remove from water and chill.
- Meanwhile, blend filling ingredients until smooth.

To serve:
- Place one poached peach half on each of 4 plates.
- Top with ¼ of filling mixture.
- Slice 2 remaining peach halves into 8 slices.
- Add 2 slices per plate to garnish.
- If desired, sprinkle with icing sugar and cinnamon.
- Place mint sprig on each plate.

<p>I was born and raised in Connecticut. I love the New England area, I think it is so pretty with the change of the seasons. <br /><br />I work for an ambulance company in their wheelchair division for non-emergency transportation. I work in the billing and customer service office. I love my job, the duties are so varied that you are always working on something different....no time for boredom. <br /><br />I am a mother to four, two sons and two daughters. <br />All have left the roost to start there own family. At last count, I was a granny to 6 boys and 2 little girls. <br /><br />I love Recipezaar and all the new daily postings. I see so much I want to try and continue to save them. I just don't have all the time to make all these recipes. I lost my husband in July 2006 and I am not the spring chicken anymore...pretty tired when I get home from work...so it's all quick, quick, quick, for me. <br /><br />I have tried a few....and have been pleased with my results and the new taste sensations. I am trying to initiate a goal of trying at least two new recipes a week.
