Cinnamon Poached Peaches With Mascarpone Filling

This easy to prepare dessert makes an elegant, yet light finish to a meal.

  1. Combine water, 1 tbsp sugar and cinnamon sticks in saucepan; bring to a boil.
  2. Set peach halves in saucepan, cover and simmer for 10 minutes.
  3. Remove from water and chill.
  4. Meanwhile, blend filling ingredients until smooth.
  5. To serve:
  6. Place one poached peach half on each of 4 plates.
  7. Top with ¼ of filling mixture.
  8. Slice 2 remaining peach halves into 8 slices.
  9. Add 2 slices per plate to garnish.
  10. If desired, sprinkle with icing sugar and cinnamon.
  11. Place mint sprig on each plate.
