Muffins
- 1⁄3 cup shortening
- 1⁄2 cup sugar
- 1 egg
- 1 tablespoon vanilla
- 1 1⁄2 cups all-purpose flour
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon ground nutmeg
- 1 tablespoon ground cinnamon
- 1⁄2 cup milk

Topping
- 6 tablespoons butter (melted)
- 1⁄2 cup sugar
- 2 tablespoons cinnamon
directions
- Preheat oven to 350°F.
- In a small bowl, beat together shortening, sugar, egg, and vanilla.
- In a separate bowl, combine flour, baking powder, salt, nutmeg, and cinnamon.
- Add flour mixture alternately with the milk to the shortening mixture.
- Fill greased muffin cups 1/2 to 2/3 full with batter, and bake at 350°F for 20 minutes.
- Once muffins are cooked, allow to cool for 5 minutes.
- For topping, roll the tops of the muffins in the melted butter, and then in the cinnamon-sugar mixture. Serve warm with milk or coffee!

These are very tasty cinnamony-flavored goodies. I'm not sure I'd call them a muffin though. They're more like a heavy cake texture, to the point where I think they'd work just as well baked as a snack cake and iced. Very good, and we really like them. The batter was thick so I used an ice cream scoop to fill the muffin pan. Made for Bargain Basement 12/10.
