  • Sift together flour, sugar, brown sugar, baking powder, salt, and cinnamon.
  • Combine egg, oil, and milk, add to dry ingredients. Stir just enough to moisten.
  • Fill greased muffin tins 2/3 full.
  • Bake at 400.
  • For a frosting I use powder sugar and milk make them taste like a cinnamon roll.

  1. I enjoyed quite a lovely breakfast this morning, thanks to you, Kim! This recipe supplied 8 regular sized muffins that baked for 18 minutes when done. I filled the remaining 4 empty muffin cups half way with water. I used Kim's suggested powdered sugar drizzle over these delicious muffins and couldn't wait for them to cool, so ate 2 right away! Wonderful recipe for my Saturday morning (or anytime)!!

  3. I made this at the very last minute when I needed to whip up some muffins for a guest who was already on the way to my house. I was nervous filling the cups because the batter looked very thick. Also, I didn't see a length of time for cooking. I guessed 10 minutes and added another five. They could have used another couple of minutes but we liked them just how they were. Turned out fantastic! So easy and flavorful. I didn't even add a topping. There was a nice, slight crunch to the edges and the inside was soft and tasty. Thanks! A keeper.

I had to use subtitutes because I was out of eggs and regular oil -- I used 1/4 c. applesauce in place of the egg and lemon-infused olive oil in place of the regular oil. I then put some cinnamon sugar on top of each muffin just before baking. Made 9 regular sized muffins and cooked 18 minutes, came out moist and delicious. THANK YOU!
     
  5. I am somewhat new to this whole cooking/baking thing, but I am good at following recipes. These came out AMAZING. I read some reviews and made sure not to overcook them, and added a little extra cinnamon, and the frosting came out great, too. I added this to my favorites and I'll most definitely be making these again. Thank you!!

  3. These were really good. I added an extra 1/4 tsp of cinnamon but otherwise followed the recipe and they turned out nicely. I wasn't sure how I would feel about the icing but I just mixed a little powder sugar with milk and it added a nice touch to the muffins. I also could only get 10 muffins out of the batter and I think next time I will try the recipe with applesauce instead of the oil. I will also bake at 350 for a little longer instead of 400. Overall a very good recipe and nice flavor.
     
  4. these were delicious and very simple to make and adjust to your liking. i put oats and bran in them for some of the flour to make them more fiberous, i also doubled the cinnamon, subbed the oil for applesauce and added vanilla as someone suggested. we also just picked some fresh blueberries so i threw in a handful or so of those. very yummy. thanks
     
  5. These were good, but a little bland, I think I will double the cinnamon next time. I too, replaced half the oil with applesauce. but instead of frosting, sprinkled them with brown sugar before baking. Makes them look better and more attractive.
