Cinnamon Honey Snack Cake

A "cake" born of my love for pancakes and desperation at not having a stove in my current location. The "cake" isn't overly sweet, and is surprisingly moist for being cooked in the microwave, a fact that I attribute to the addition of the cinnamon.

Directions

  1. Mix all the ingredients, except the honey, together in a microwave safe bowl. Microwave on high for one minute in a 600 Watt microwave (obviously adjust cooking time to microwave power).
  2. When fresh out of the microwave, drizzle the honey all over the top of the cake. Wait one minute for the honey to sink in, and enjoy.

This was so easy! I did change it, sorry. I doubled the recipe, used a dash of nutmeg. I used milk instead of water. Sprayed my small casserole dish with cooking spray and cooked in microwave on high for two min. Never would have guessed it was microwaved.

This totally didn't work. it was hideously gooey and not set at all. I think 'pancake mix' maybe needs to be defined. Is it a just add milk, or just add 1 egg and water etc/ one? If i can get it to work I'll rate
