  • Pre-heat oven to 350 degrees.
  • Cream together shortening or butter, brown sugar and egg, then stir in coffee.
  • Stir in flour, baking powder, baking soda, salt and cinnamon.
  • Blend in raisins and walnuts.
  • Spread mixture in a greased 9-by-13-inch pan and bake for 18 to 20 minutes.
  • Mix together ingredients for glaze. Cut cake into bars and frost with glaze while warm.

  1. Who needs Starbucks? These are simply delicious little bars! They are very moist with a perfect balance of nuts and raisins (I used pecans, shortening and a flavored coffee). The only change I made was to double the frosting; it took about 3 tablespoons of water to make it into a "glaze". I thought it would be too difficult to frost the bars after they were cut, so I just spread the glaze on with a spatula while they were still warm, and then cut them into bars after they had cooled. They did have a bit of a ragged look, but who cares--they are divine! Kiwidutch, thank you for a wonderful recipe--one I will make often! God bless you for making the beautiful little Christening gowns for the tiny angels destined to go home early!
     
  2. Very nice bar. Next time I would bake in a 9 x 9 pan so that the bars would be thicker. I had to leave the raisins out for DH but if you like raisins, I would definitely add them. I love raisins. I would also add milk instead of water to the glaze next time. Thanks Kiwidutch for a nice treat. Made for The Best of 2008 Cookbook.
     
  3. Very nice, easy and delicious bar cookie. It took no time to put together. I used pecans instead of walnuts cuase that's all I had, but still just as good. Made this for the 12 days of Christmas swap.
     
  4. Kiwi, Truly, a KEEPER! I used extra strong coffee but otherwise made as directed. Next time, I will increase the amount of glaze a little. These are delicious, have a great taste. I'm so pleased you shared this recipe....Janet
     
  5. Kiwi - we love these bars! They are moist but hold up well when cutting and serving. I skipped on the glaze just because we could not wait any longer. For guests I would either serve with the glaze or just dust with confectioners' powder. I used dried cranberries as I did not have raisins and used walnuts as directed.
