Cinnamon Banana Bread With Mayonnaise

This banana bread comes out moist and not too dense! The mayonnaise instead of oil/butter makes for a lighter tasting banana bread. Not only that, but it does not leave the fingers greasy! Enjoy :)

Directions

  1. Whisk eggs, mayonnaise and bananas until blended. Add vanilla and stir.
  2. Sift flour, baking soda, baking powder, cinnamon, nutmeg and salt in separate bowl.
  3. Stir brown sugar into dry ingredients until blended.
  4. Combine dry ingredients into banana mixture and stir until just moistened (important to not overstir!).
  5. Fold in walnuts.
  6. Bake 1 hr - 1hr 15 minutes Or until toothpick inserted in centre comes out clean.
