- 16 ounces plain yogurt
- 2 eggs, beaten
- 1⁄4 cup cinnamon flavored apple juice or 1⁄4 cup apple cider
- 1 tablespoon baking soda
- 1 teaspoon baking powder
- 2 cups flour
- Combine yogurt, eggs, and apple juice. Mix well.
- Slowly add all dry ingredients and mix until well blended.
- Cook waffles as directed by the manufacturer of your waffle iron.
As is, these waffles have no real cinnamon or apple flavor. When I made them, I added a sliced apple and a tsp or so of cinnamon and I'd say that brought it up to about 3 stars. I like using the yogurt and egg whites for a healthier waffle, but you'd probably need to add TWO sliced apples and a lot more cinnamon to this recipe to actually get the flavor.
