This cake is amazing. I added some nutmeg in addition to the cinnamon which was certainly the right call. The bake time was a bit off. I used a silicone bundt pan though, so took the temp down to 325 and added roughly 15 min to the bake. So it wouldn't over brown I used foil on top for the last 20 minutes. I also shredded the apples with a box grater. It was so incredibly moist and dense (in a good way). I would certainly make this again for any occasion.

  1. Preheat oven to 350 degrees.
  2. Mix together the eggs, vanilla, apple cider, and oil.
  3. Combine the dry ingredients.
  4. Mix the cider mixture with the dry ingredients. Add the sliced apples. Add walnuts (optional, if desired).
  5. Pour the batter into a greased bundt pan. Bake for 50 minutes, or until toothpick comes out clean.
  6. For the glaze, mix the powdered sugar, brown sugar, cinnamon, and vanilla. Add in a few drops of cider and mix until it forms a pourable glaze.
  7. Refrigerate before serving.
