Cincinnati Chili Five-Ways

"This recipe is from "Heritage of America Cookbook" by Better Homes and Gardens. The combination of honey, spices, and chocolate give this chili an unusual but pleasant earthy sweetness."

  • In a 4-quart Dutch oven cook beef, 2 cups of onions, and garlic till beef is brown and onions tender. Drain fat. Stir in remaining ingredients except fettuccine, kidney beans, cheese, and remaining onion. Bring to boiling; reduce heat. Cover and simmer over low heat for 1 hour. Skim fat.
  • Cook fettuccine, drain. Keep warm. In a 2-quart saucepan heat kidney beans; drain. Keep warm. To serve, divide fettuccine among 8 plates. Make an indentation in center of each fettuccine portion. Top with meat sauce, beans, remaining onions, and cheese.

  1. I really enjoyed this recipe. That being said, I did make a couple of changes. I'm not wild about chili over noodles, so I did not do that part. I also used 2 medium onions in the pot only. <br/>I also used 2 ounces or about 4 squares of 72% dark chocolate because that is what I had on hand. <br/>A tad more chili powder was used as was a teaspoon of cider vinegar.<br/>Beans went right into the pot as well and I used 1 can of Pinto and 1 can of Kidney beans. Served with chips of choice and/or a nice cornbread. Flavor was fantastic! Almost like a Chili Mole.
