The perfect anecdote to a scorching summer's day - chill out with this sparkling white wine and herb cooler
- 1 bunch fresh cilantro
- 1 1⁄2 pints sparkling white wine, sweet, preferably Asti Spumanti, chilled
- 1 lime, juice of
- Tie the cilantro to secure in place before bruising the leaves and stems with the flat blade of a knife. This helps extract the maximum flavour.
- In a pitcher, infuse the cilantro with the wine for 10 minutes or so. Sharpen with lime juice, stir well and pour into six wine glasses.
