  1. Tie the cilantro to secure in place before bruising the leaves and stems with the flat blade of a knife. This helps extract the maximum flavour.
  2. In a pitcher, infuse the cilantro with the wine for 10 minutes or so. Sharpen with lime juice, stir well and pour into six wine glasses.
