This I loved! just made it for lunch... unfortunatly my BF said it tasted "strange"...I guess the combo of cilantro and tofy just didn't go down too well with him... he's more into steak and chips...shame, because I really enjoy experimenting with "different" things (diffferent to him that is, I love cilantro...and tofu). Refreshing and just a little bite from the cilantro and the onion. Nice textures from the rice and the tofu and just the right zing from the vineagrette

I thought these were great. They have just the right amount of flavoring and they are surprisingly filling. I'm not sure if someone who isn't accumstomed to healthy eating would find them quite as satisfying but speaking as someone who appreciates healthy food, this recipe is a definite winner.
I think it's a real winner. Simple, quick, delicious, well balanced, light, and satisfying. Wonderful textures. It makes a great meal in a bowl, good for hot weather. Inexpensive to make, too. I used x-virgin olive oil. Very glad to have this recipe for everyday use, and I wouldn't be afraid to take it to a potluck either.
