Delicious, tangy "go to" dressing best on Spinach Salad. Adapted from Viking Cooking School "antioxidants" menu.
- 1⁄4 cup olive oil
- 2 tablespoons chopped cilantro
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1⁄4 cup fresh lime juice
- 3⁄4 teaspoon salt (or salt to taste)
- 1 teaspoon lime zest
- 1⁄4 teaspoon fresh ground pepper
- Combine all ingredients and whisk until combined thoroughly.
