Amazing!!!! I loved this recipe. I am a huge fan of cilantro. I used Mirj's Foolproof Microwave Rice - Perfect Every Time! to cook the rice which was great. I was a little nervous about the lime and only used one. That was just enough to brighten up the rice and the cilantro added so much. It makes such a difference to use fresh cilantro instead of dried. Very good recipe, thanks for sharing!!!

This was a good recipe. I thought it might have been too much lime flavoring. Next time I make it, I will only use 1 small lime and half of the zest. Otherwise, delicious!!

This was good. I ran out of fresh cilantro so used some dried but I really think fresh would have been better. Served this with Grilled Chipotle Lime Chicken Breasts - or Thighs Chipotle Lime Chicken Breasts (or thighs) and it was a nice combo.

I served this rice with chipotle chicken with adobe sauce. Wow was that a good pair. I used 2 bags of Success boil in the bag white rice, cooked it as usual and then I added lime juice and the fresh chopped cilantro and salt. Perfect, fresh flavor.

I adjusted the recipe a bit: I used a little bit of chicken bouillon in the water when cooking the rice and eliminated the salt. I also used long grain brown rice for a healthier spin. VERY tasty! I'll be making this with all my mexican food dishes! If you make this with brown rice, allow 40-45 minutes cooking time.

I forgot to add the lime zest, but this was still really good. We used it to make our own copy cat Chipotle burrito bowls.

Whole family loved this rice. I cooked 1 cup of uncooked rice with 2 cups of chicken broth. I used about 1/4 a cup of lime juice(I didn't have a fresh one on hand.) I used about 1/3 cup fresh cilantro. I also added a dash of cumin and cayenne pepper to the rice when it was cooking. Will never make packaged Mexican rice again!

VERY limey, too much for our taste (we used only one lime, plus the zest because it tasted so strongly after just one). But it went well in a burrito. We'll probably use this again, just with less lime. Thanks!
