  1. In a saucepan, saute the shallot and garlic in a little bit of olive oil until translucent.
  2. Add the quinoa and broth and bring to a boil. Once boiling, reduce heat, cover and cook for 15 minutes until broth is absorbed. Stir in pepper to taste, lime juice, butter, and cilantro.
  3. Add the beans to the quinoa and stir until heated through.

I'm already a quinoa fan. This was fabulous and it's own and I think a great "staple" to have made up in the fridge to eat on it's own or as an addition to fish tacos, or to other latin flavored salads! Thanks sofie!!!! made for Culinary Quest 2014 Int'l Agents of Quest.
