Here's a refreshing change to basil based pesto!
- 1 cup packed cilantro
- 1⁄2 cup packed parsley
- 1⁄4 cup toasted walnuts
- 1⁄3 cup olive oil
- 3 tablespoons parmesan cheese
- 1 teaspoon lime zest
- 2 tablespoons lime juice
- Place all ingredients in a food processor or blender and pulse to smooth.
- Salt and pepper to taste.
Great flavor and very different from traditional basil pesto. I put the cilantro and parsley in the food processor to chop before adding the other ingredients. Good with shell pasta or rotini, makes a very nice side dish.
