Cilantro-Lime Chicken Salad

"This is a recipe I developed and submitted to another website, Chicken breasts are cubed, stir-fried and added to a cilantro, lime juice, honey, and garlic dressing. Serve on a salad of mixed field greens, or over Jasmine Rice. Wrap in a flour tortilla or lettuce leaves for a lunch on-the-go. The prep time includes marinating time."

  • Combine the lime peel strip, soy sauce, and chicken cubes. Place in a resealable plastic bag and marinate 1 hour, or longer.
  • Heat the olive oil over medium-high heat. Remove the chicken from the marinade and discard the marinade.
  • Stir-fry the chicken cubes in the olive oil, until opaque and slightly browned.
  • In a separate bowl, whisk together the lime juice, olive oil, honey, garlic, salt, and pepper. Stir in the chopped cilantro. Mix well, pour over the chicken.

  1. Great chicken and very versatile. I took Jociecee's suggestion and added a little olive oil, garlic and cilantro to the marinade and used that as the dressing. It would also be great hot with rice and vegetables.
     
  2. Took your and another reviewer's suggestion to have this over rice rather than salad (although that sounds good too) and it was really yummy that way. The lime gave the rice a really good flavor. Because I had the chicken over rice, I only used a tiny bit of oil for the dressing and omitted the honey (personal preference). I also loaded up on the cilantro since I love it (and I didn't have any other veggies with this); everything melded very well together.
     
  3. The chicken had a great flavor but next time, I will marinate it in some of the olive oi, garlic and cilantro too, so the flavors meld better and try it with boneless thighs. The kids ate the chicken up before I could put it on salad greens, lol!:) I may try this recipe as a marinade for chicken on the grill too. I made it for Spring PAC 2010.
