Great chicken and very versatile. I took Jociecee's suggestion and added a little olive oil, garlic and cilantro to the marinade and used that as the dressing. It would also be great hot with rice and vegetables.

The chicken had a great flavor but next time, I will marinate it in some of the olive oi, garlic and cilantro too, so the flavors meld better and try it with boneless thighs. The kids ate the chicken up before I could put it on salad greens, lol!:) I may try this recipe as a marinade for chicken on the grill too. I made it for Spring PAC 2010.
