I love this with grilled or roasted veggies! Non-fat yogurt and sour cream work just as well!

I feel like this is one of the most delicious things I have ever put in my mouth. Oh. My. Word. I even made it with all non-fat yogurt, and without the parsley because I didn't have any, and it is still incredibly good. I let it sit in my fridge for a day before eating any of it, and it got very thick and the flavors melded beautifully.

This was a flavorful, fresh-tasting recipe. I used low fat yogurt and sour cream and it was still creamy and thick. I also used a bit less cilantro than the recipe called for but the cilantro flavor still came through. I served this on roasted vegetables and jasmine rice. Very refreshing.

A nice recipe for a summer salad. Make it more low cal and low carb with low fat sour cream and no fat yogurt. A recipe that would work well with a variety of herbs such as lemon basil, chives, etc.
