Cilantro and Coriander Seed Naan Bread

  • Dry roast the seeds until aromatic.
  • Crush them coarsely using a Mortar and pestle, or use that coffee grinder that has been lying around unused for a while now :).
  • Put them into a pan with the water and bring it to a boil. Set aside.
  • Put the yogurt into another bowl, add the yeast. Pour the seeds+water mixture and stir well.
  • Add 1-1/2 cups of flour and stir it well until blended. Cover the bowl and let it prove for 30minutes.
  • Then add the salt, oil and the remaining flour. Knead it well on a lightly floured surface until smooth and place it back in the bowl. Cover it and let it double - approx 1 hour.
  • Then punch it down, turn it down on a lightly floured surface and slowly add in the chopped cilantro into the dough.
  • Divide the dough into small balls and then using a rolling pin, roll it out into oblong shapes.
  • On a skillet, place the naan, brush it with little oil.
  • once its done on one side, turn it the other side.

  1. I made half a recipe but got 8 naan out of it. Easy to do and great flavors to go with Tandoori chicken and saffron rice. Next time I will add more cilantro as we love it but was great as is.
     
  2. It was really interesting - and easier than I thought - to make naan. I have eaten my fair share over the years but never actually made it before - and it won't be my last time. I let the dough rise for 4 hours (a tip from some Indian friends). The receipe makes enough for 8 servings; I got 10 individual naans. You need to roll the dough quite thin, otherwise it is difficult to cook all the way through and you do not get the 'bubble' effect. The flavour was outstanding. The recipe ingredients omit the fresh cilantro, I added 1 tbsp finely chopped. Made for Newest Zaar Tag.

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
