You can try this to help stave off a cold or to make yourself feel better if you already have one. That may or may not be an old wives’ tales but the toddy certainly tastes good!
- Bruise the root ginger with a rolling pin, then heat it with the cider and lemon peel in a small pan until the liquid begins to bubble.
- Take off the heat, stir in the honey and strain the liquid into a warmed glass or mug.
We both liked this - it was hot and honey sweetened cider - what could be nicer on a cold evening! We both would have liked a bit more of a "zing" however....the ginger and lemon were hardly discernable in the hot cider....maybe you could suggest that the ginger root be infused in the cider overnight before heating it up? And I think this needs more lemon too......but still a delightful and very comforting hot drink that we enjoyed. Thanks Luschka - made for photo tag. FT:-)
