  • Preheat oven to 350°F.
  • Beat butter and brown sugar for 5 minutes in a mixing bowl.
  • Beat in eggs and vanilla until blended. Set aside.
  • In a separate bowl mix flour, pumpkin pie spice, allspice and salt.
  • Gradually add to sugar mixture; beating until well blended.
  • Stir in apples, nuts and raisins (if desired).
  • Pour into a greased 9 inch baking pan,.
  • Bake 35-40 minutes or until toothpick inserted in center comes out clean.
  • Cool on a wire rack for 10 minutes. Serve warm with Vanilla Butter Sauce.
  • VANILLA BUTTER SAUCE:

  • Combine butter and whipping cream with brown sugar.
  • Bring to a boil over medium heat.
  • Reduce heat; simmer for 10 minutes or until slightly thickened.
  • Remove from heat; stir in vanilla.
  • Serve warm over cake.

  1. My entire family just LOVES this cake. It was pretty easy to make, too. I used 1 big gala apple and omitted the raisins. We can't stand baked raisins. The sauce really makes this special. We keep it in a separate bowl and reheat it as needed. The cake holds up well, too. We made it a few days ago, and we've kept it uncovered in the oven. It hasn't gone stale yet. I didn't have a 9" baking pan, so I had to use a 9x13 casserole. I think it's too shallow, but it turned out well. This cake is pretty enough to serve to company or in a buffet. 5 stars! Made for fall PAC 08.
