  • Combine all ingredients in the crock pot (start with 2 cups of water, add more as need.
  • Cook on low for 6-8 hours. (Or high for 3-4).
  • Shred chicken & serve in tortillas!
  • Enjoy!
  • (I throw in extra of everything & make extra for the freezer-yum!).

  1. I made this yesterday and LOVE it!! PLEASE NOTE: Next time I will either soak the pinto beans overnight in water or make sure they are towards the bottom of the crock pot since I cooked this on low for 11 hours and the beans did not fully cook (I was not home to stir occasionally which may also remedy this problem.)
     
  2. Very tasty- added some frozen corn at the end and some jalapenos. Everyone loved it- haven't tried it after freezing yet.
     
  3. This recipe JUMPED out at me! Healthy and delicious as can be! OK...was able to use up bit from pantry, TRUE! This is what I literally did do! 2 cans cream of chicken soup, 1 can diced tomatoes, 2 can Mexi beans drained, 3 x 300 g glass jars Salsa...2 out of three were spicy bean, third jar tomato salsa..did add one pack of taco seasoning and had 2 pounds chicken diced....WHEW! LOVE the ease AND can freeze! This recipe SURELY did please! THANKS!
     
  4. I haven't tried it after freezing yet but I made this today and it was absolutely delicious!!! I did not add the taco seasoning ... I have a 1 and 2 year old and I thought it might kick the spice level up too much for them but it was wonderful just the same. It made a large crock-pot full ... plenty for at least 2 meals for a family of four.

I love the upper midwest, where my husband and I have made our home. We raise our two beautiful children in a small town west of the Twin Cities. I am an engineer who has progressed to Stay At Home Mom and now just recently, Homeschooler. Never in a million years would I have expected THIS! Now, my focus has progressed from career-driven to family-driven. I love to cook, and I use my engineering degree in my cooking. I love to learn how to do things, and why things work. My husband only gets paid once a month. So, I have become a meal planner & Once A Month Cooking lover. I shop on the first of the month, and only buy needed dairy and fresh ingredients through the rest of the month. So, I look for meals that work with our plans. And, one last note: I do have a small job to get me out of the house. I am a dance instructor, and LOVE to dance (which is where my silly photo came from). So, if you were to peek in my windows (which I don't recommend by the way - he he he) you'd see me cooking and dancing.
